There is absolutely no country in the world, except perhaps the Arctic regions, โ€“ where man has not reared ducks, chickens and other poultry for table purposes down the centuries. Apart from these being an easy source of eggs to eat for breakfast, lunch and dinner every day, you also knew that you would have a tough old rooster for dinner, when a large number of family members popped in unexpectedly, demanding sustenance. We are going to be concentrating on chicken farming, for domestic purposes in this book. You have this dream of raising chickens in your backyard. You are interested in a continuous supply of eggs, and the occasional chicken for your pot of a Sunday. Layers are those chickens, which are normally raised for egg production. The chickens which are going to go straight into the pot are called broilers. Since ancient times, human beings have been raising poultry for domestic purposes and also for marketing purposes. Poultry farming has been a part of rural life in the east down the centuries. All the kitchen waste was fed to the hens. These hens came under the 21st century poultry farming term โ€“ free ranging. That meant they were allowed to scratch about in the backyard, getting their fill of insects, worms, green vegetables, organic matter, and was it a wonder that they laid delicious, nutritious, and proteinaceous eggs? Every intelligent householder kept three or four hens depending on the size of his family, and he bought a cock from the market, when he needed chickens. Once a clutch of chickens was hatched, Cocky Locky went into the cook pot. One of the common mistakes made by new poultry farmers is buying a large number of birds, because they are not very clear about whether they want these words for home consumption or they want to trade in the eggs and poultry meat. Around 50 years ago, one of my fatherโ€™s colleagues was facing this problem. He had this huge garden and backyard. He had heard about dad rearing poultry in that garden successfully. So he also wanted to experiment in this exciting new activity which would keep his family well supplied with eggs, and fresh meat. So the next time dad went visiting to his base on a tour, he asked dad the best way to raise birds without too much of a hassle. You are going to get these easy tips in the book.

Poultry Science, Chicken Culture is a collection of engrossing, witty, and thought-provoking essays about the chicken-the familiar domestic bird that has played an intimate part in our cultural, scientific, social, economic, legal, and medical practices and concerns since ancient Egypt, Greece, and Rome. Organized as a primer, the book reaches beyond narrow disciplines to discover why individuals are so fascinated with the humble, funny, overlooked, and omnipresent chicken. Spanning fascinating and diverse fields, Susan Merrill Squier assesses the chicken as the focus of film, photography, and visual art in many media; details some of the roles played by chickens and eggs in the development of embryology, biology, and regenerative mediciโ‰  traces the iconic figure of the chicken (and the chicken thief) in political discourse during the 2008 presidential election; demonstrates the types of knowledge that have been lost as food production moved from small-scale farming to industrial agriculture; investigates the connection between women and chickens; analyzes the fears and risks behind the panic around avian flu; and scrutinizes the role of chicken farming in international development. A combination of personal passion and surprising scholarly information, Poultry Science, Chicken Culture will change forever the way you think about chickens.

E-BOOK EXCERPT

Commercial Chicken Meat and Egg Production is the 5th edition of a highly successful book first authored by Dr. Mack O. North in 1972, updated in 1978 and 1984. The 4th edition was co-authored with Donald D. Bell in 1990. The book has achieved international success as a reference for students and commercial poultry and egg producers in every major poultry producing country in the world. The 5th edition is essential reading for students preparing to enter the poultry industry, for owners and managers of existing poultry companies and for scientists who need a major source of scientifically based material on poultry management. In earlier editions, the authors emphasized the chicken and its management. The 5th edition, with the emphasis shifted to the commercial business of managing poultry, contains over 75% new material. The contributions of 14 new authors make this new edition the most comprehensive such book available. Since extensive references are made to the international aspects of poultry management, all data are presented in both the Imperial and Metric form. Over 300 tables and 250 photos and figures support 62 chapters of text. New areas include processing of poultry and eggs with thorough discussions of food safety and further processing. The business of maintaining poultry is discussed in chapters on economics, model production firms, the use of computers, and record keeping. Updated topics include: breeders and hatchery operations; broiler and layer flock management; replacement programs and management of replacements; nutrition; and flock health. New chapters address flock behavior, ventilation, waste management, egg quality and egg breakage. Other new features include a list of more than 400 references and a Master List of the tables, figures, manufacturers of equipment and supplies, research institutions, books and periodicals, breeders, and trade associations. Commercial growers will find the tables of data of particular interest; scientists will be able to utilize the extensive references and to relate their areas of interest to the commercial industry's applications; and students will find that the division of the book into 11 distinct sections, with multiple chapters in each, will make the text especially useful.
